Sweet Potato Scones
Ingredients
- 2.5 c Flour
- 1/3 c Brown Sugar
- 1 tsp Baking powder
- .5 tsp Baking soda
- .25 tsp salt
- 1 tsp Rosemary with flour microwave 1 min, finely chopped
- .5 tsp nutmeg grated
- .5 c cold unsalted butter Can use some bacon fat
- .5 c Sweet potato puree
- 1.5 tsp vanilla extract
- .5 c Buttermilk
- 6 slices Bacon cooked and diced
- 1 tbsp Heavy cream (for brushing top)
Instructions
- Preheat oven to 400.
- Pulse first seven ingredients together in a food processor with dough blade. Add butter to processor and pulse (or using a pastry blender or 2 forks) until mixture is crumbly.
- Mix together vanilla, buttermilk and sweet potato puree. In a bowl, add wet ingredient to dry and mix until just combined. Add chopped bacon.
- Turn dough out onto a lightly floured surface. Knead gently 8 to 10 times until ingredients are evenly distributed. Pat dough into two rounds approximately 1 inch thick. Cut each round into 10 triangles.
- Place on a baking sheet with silpat or parchment. Leave room for them to expand. Brush tops with cream.
- Bake for 15 minutes or until browned and risen.
