Cut this hearty peach oatmeal bread in thick slices and slather with a bit of butter. It is very hearty, not too sweet and just crumbly enough for the butter to play it's part.
Preheat oven to 350. Grease two loaf pans
Mix dry ingredients well; toss in peaches and coat
Beat together eggs, milk and oil. Add to flour/peach mixture, stirring just until evenly moistened.
Pour into prepared pans and bake for about 1 hour (test for doneness).
Cool in pan 15 mins then transfer to cooling rack.
You can use olive oil for vegetable oil.
