Ricotta Italian Meatballs
Ingredients
½
pound
ground pork
½
pound
ground beef
¼
cup
yellow onion
finely chopped
3
cloves
garlic
minced
1
cup
ricotta cheese
½
cup
parmesan cheese
fresh grated
1
egg
beaten
1/3
cup
flat leaf parsley
chopped
1
t
dried Italian seasoning
crushed between fingertips
A few grates fresh nutmeg
A pinch or two of ground sea salt and fresh ground black pepper
Instructions
Preheat oven to 350 degrees
Mix all ingredients together
Roll into 1 ½ in meatball
Brown in frying pan and finish in 350-degree oven for about 18 - 20 minutes until cooked through

Serve with your favorite marinara sauce, over pasta or spaghetti squash
