Pancakes are a breakfast staple… but have you ever had a baked pancake?

And not just baked—but one that rises beautifully in the oven, with a soft, custardy center and golden edges?

At Whispering Pines, one of our most-loved sweet breakfast dishes is our French Baked Pancake. It’s a true crowd-pleaser—and one that often gets guests pausing mid-bite to ask:

“Wait… what kind of pancake is this? I’ve never had anything like it!”

(It’s definitely not your typical flapjack.)

A Recipe That Became a Signature

When I first purchased the B&B, I had a handful of tried-and-true breakfast recipes in my back pocket—but I was also on the hunt for something a little different. Something memorable.

That’s when I came across this French Baked Pancake.

Like any good cook, I couldn’t leave it alone. After a few test runs (and making the classic “three changes” to call it your own), I found just the right balance to turn it into something special—something worthy of becoming a Whispering Pines signature dish.

The Secret We Don’t Tell Right Away

Here’s where things get fun.

The French are known for their custards—and this pancake absolutely delivers. It has a soft, almost creamy center that surprises people in the best way.

And yes… there’s cottage cheese in it.

Now, before anyone gets nervous—we’ve learned something over time: we don’t mention that little detail until after the first bite.

Because even self-proclaimed “cottage cheese haters” take one bite and go straight to:

“Hmmm… wow, that’s really good!”

A Little Texture Magic

Another thing that makes this dish special is how we serve it.

We often bake it ahead of time, then cut it into portions and reheat it just before serving. That extra step gives the outside a slight golden crunch, while the inside stays soft, fluffy, and custard-like.

It’s that contrast—light and creamy with just a bit of texture—that makes it so memorable.

Simple, Seasonal, and Always a Little Different

One of the things I love most about this pancake is how beautifully it pairs with the seasons.

In the spring and summer, we top it with fresh fruit—sometimes berries from our own property, sometimes from nearby orchards. In the cooler months, it leans cozy and comforting with warm, spiced toppings.

No matter the time of year, it’s just a little unexpected—and that’s what makes it a favorite.
