Grilled Watermelon (Salad)

Summertime screams watermelon!  And we love to use it around here for breakfast, luncheons and even as dessert.

One of our favorite way to treat this tasty melon is to grill it, compliment it with a few of it’s favorite pairings and you’ve got a delicious salad.

Grilled Watermelon Salad

This combination is so flavorful and the quick grill of the fruit really brings out the sweetness yet adds a little smokiness.

Ingredients

  • 8-10 wedges of grilled watermelon
  • 1-2 c strawberries optional
  • ⅓ cup feta crumbled
  • ¼ cup basil or mint leaves torn
  • 1 lime

Instructions

1.Heat grill to medium.Cut watermelon into triangle wedges, about .5 – 1 inch thick. Leave rind on for ease of handling and grilling.Rinse and hull strawberries if using. Pat dry

2.Add the watermelon wedges in a single layer to grill. Heat until warmed through and grill marks appear, ~ 2 – 3 minutes each side. Remove from grill to cool.

    3.Add whole individual strawberries to grill. Heat and turn until warmed and start to soften. ~ 1 – 2 minutes. Remove from grill to cool.

    4. When cool to handle, trim rind from watermelon, cut into bite-size cubes and arrange on a platter. Quarter strawberries into bite-size pieces.

    5.Sprinkle the feta and basil (or mint) all over the watermelon.

    6. Cut the lime in half and squeeze the juice all over the watermelon and finish with a sprinkle of salt. Lightly combine and serve at once.

      Recipe Notes

      Delicious with or without strawberries.  Ingredient amounts can be adjusted to your preferred split of the fruits. Love feta and basil, add more to your taste.
