Cranberry Salsa

This salsa is so fresh using many of the seasonal winter fruits. I typically make a double batch because it’s that yummy!

Ingredients

  • 1 1/2 cups fresh cranberries
  • 1 pear peeled and roughly chopped
  • 1 large apple peeled and roughly chopped
  • 1/4 c red onion
  • 1/2 c jalapeno seeds removed and roughly chopped
  • 1/3 c fresh cilantro
  • juice of 2 limes
  • juice of 1 orange
  • 4 tablespoons of honey
  • 1/4 teaspoon salt

Instructions

1.Combine all ingredients and pulse in food processor until reach desired consistency. Blend until smooth or leave in small pieces like a pico de gallo.

2.If too tart, increase honey or add sugar to taste.

3.Serve with pita or tortilla chips or graham crackers.

While fresh cranberry’s are in the stores during the holiday season, stock up and freeze them to make this salsa all winter long!  Use it to dress up a salad, on sandwiches or in wraps.
