Peach Oatmeal Bread

One of my favorite things is a recipe that has been shared with me.  First, because you know it’s tried and true – otherwise, they wouldn’t share it.  Second, whenever I make or bake it, I get to think about that person.  This Peach Oatmeal Bread is one of those recipes.

Thanks to my old neighbor Hollie for this one; I miss and think of you often!

Cut this hearty peach oatmeal bread in thick slices and slather with a bit of butter. It is very hearty, not too sweet and just crumbly enough for the butter to play it's part.

Ingredients
  • 2 c peeled chopped peaches (drain if using canned)
  • 2 3/4 c whole-wheat flour (Or 2 c whole wheat and 3/4 c bread flour
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 c old fashioned rolled oats
  • 2 large eggs
  • 1 c milk
  • 1/4 c vegetable oil
Instructions
  1. Preheat oven to 350. Grease two loaf pans

  2. Mix dry ingredients well; toss in peaches and coat

  3. Beat together eggs, milk and oil. Add to flour/peach mixture, stirring just until evenly moistened.

  4. Pour into prepared pans and bake for about 1 hour (test for doneness).

  5. Cool in pan 15 mins then transfer to cooling rack.

You can use olive oil for vegetable oil.
