Strawberry Cheesecake Parfait

While the strawberries are ripe, this is a tasty take on cheesecake and can be made into individual servings or in a trifle dish.

Strawberry Cheesecake Parfait

Ingredients

  • 1 pound of strawberries
  • 2 tablespoons sugar divided
  • 1 cup graham cracker crumbs about 1 sleeve crushed
  • 4 tablespoons butter melted
  • 12 ounces of cream cheese room temperature
  • 1/2 cup sour cream
  • 2/3 cup confectioners’ sugar + 1 TBS
  • 3 teaspoons vanilla divided
  • 1 cup heavy cream
  • mint springs for garnish

Instructions

  1. Rinse strawberries. Remove the hull and dice the strawberries into a bowl. Sprinkle with one tablespoon of sugar. Toss together and set aside.
  2. Melt the butter in small saucepan or microwave. Mix the graham cracker crumbs with the melted butter and one tablespoon of sugar.
  3. Beat cream cheese with an electric mixer paddle until smooth. Add the sour cream, 1/2 cup confectioners’ sugar and vanilla or liqueur, if using, and beat until combined.
  4. In another bowl, whip the heavy cream with the electric mixer using whisk until soft peaks form. Add 1 tsp vanilla and 1 Tbs confectioners sugar. Whisk around until combined and stiff peaks form. Fold half into the cream cheese mixture.

Assemble Parfaits

  1. The amount you use for each layer will vary according to how many parfaits you are making, so adjust accordingly. Place about a tablespoon of the graham cracker “crust” in the bottom of your glasses.
  2. Layer about a tablespoon of the cheesecake filling into the glasses, then some of the strawberries and then a layer of whipped cream.
  3. Repeat layers and end with a sprinkle of graham crackers. Top with mint.
  4. Refrigerate until ready to serve.

Recipe Notes

In place of vanilla,  in cream cheese mixer, you may choose to flavor with a complimenting liqueur or cordial.
